Business structure for low salary?

I’d like to find some info on a business structure where I can run a small business inside it (incl. investments), pay myself a modest salary, and accumulate gains over time inside the business. (Too long a story to explain why. I just have to keep a modest income for personal financial/health reasons.) Looking for 100% legal. Nothing shady. And not concerned about minimizing taxes, just having the right structure to keep my personal income modest for now. I know it’s out there. Rich folks build such structures all the time.
