Critique/Ideas for my girlfriends food truck business?

Hey guys, my girlfriend is starting a food truck in the summer. Churros and soft serve ice cream! She's got her recipe down and she's in the process of finishing all the courses/licenses etc.My question is, does anyone have any insight/helpful ideas for my girlfriend, possibly out of experience?
