Advice on starting a food truck?

Hey guys,A close friend of mine has expressed interest in starting a food truck. Im familiar with all of the legal requirements for starting a business etc, but I am wondering if anyone has some insights on this business model particularly.Id likely be doing the accounting/management and he and one other guy would do the actual operations (ill probably jump in here and there).Whatcha got?
