How do you shrink your ambitions to get an optimal amount of viability?


I know how to code, I have things to show, I went to have quite a good education, I'm curious and able to learn a lot of things, but I have no relevant degrees, no legitimacy and too little professional experience.At some point, I need to realize I have to clamp down on my ambitions and go back to more realistic goals so I can move forward.How do you find goals that are attainable in term of business, that are viable, not too boring, without dismissing 100% of doing what you like?I feel there is cursor where you have to "realistically follow your dreams" but also not be too ambitious and find a sweet spot where you can get some validation from others to feel comfortable.For example, I'm not willing to build websites or debug accounting apps, I see too little value in those things.
